A rich dark winter ale for cozy evenings by the fire
This kit uses a selection of roasted malts to offer a deep brown colour and a very pleasant malty flavour. With a high original gravity of 1.065, the Winter Ale develops a full body and indulgent notes. Fermentation with the included "Continental Ale" yeast ensures a clean profile that lets the richness of the grains shine through. This is a beer for ageing that matures beautifully over time.

-
Maturation: This is a "dessert beer." A prolonged bottle conditioning (8 to 12 weeks) is highly recommended to mellow the malty notes.
-
Fermentation Temperature: Maintain between 18°C and 23°C for optimal yeast performance.
-
Sugar Choice: Replace table sugar with brown candi sugar to add molasses notes and enhance the ruby-red colour.
5. FAQ Flash
-
How much water should I add? To respect the style and the 6.8% alcohol, do not exceed a total volume of 7 litres (including concentrate) in your fermenter.
-
Why only 7 litres? This small volume concentrates sugars and aromas to achieve the 1.065 gravity necessary for a powerful Winter Ale.
-
Which glass should I use? Ideally served in a "Chalice" style glass to release the full power of the winter aromas.
