Malty power and legendary aging potential
This Barley Wine is characterised by a very high original gravity of 1.080, providing a dense and syrupy mouthfeel. The fermentation develops aromas of caramel, prunes, and dried fruits that balance with a fine but present bitterness. It is the ultimate cellar beer: it evolves beautifully over time, sometimes reminiscent of fortified wines or cognac after several months of aging.

Tips Experts :
-
Forget it in the cellar : A Barley Wine is best enjoyed after 6 to 12 months of conditioning. The alcohol mellows, and the residual sugars develop incredible complexity.
-
Sugar Choice : Using amber candi sugar will accentuate the caramel and dried fruit notes, reinforcing the "malt wine" profile.
-
Serving : Enjoy at cellar temperature (12-14°C) in a snifter glass to concentrate the esters.
FAQ Flash :
-
Is it very bitter? No, the bitterness is moderate to allow the malt power to take centre stage.
-
Why only 9 litres? This is the ideal volume to achieve the sugar concentration required for the Barley Wine style with 1.5kg of extract.
-
Storage : Can age for several years, much like a fine wine.
