It is often said that the brewer makes the wort, but it is the yeast that makes the beer. This living microorganism, part of the fungus family, is the true alchemist of your brew. By consuming the sugars from the malt, it not only produces alcohol and CO2, but also shapes the final aromatic profile of your beverage.

1. Fermentation: Much More Than Alcohol

Yeast is a voracious organism that transforms the fermentable sugars extracted during mashing. This metabolic process generates three crucial elements:

  • Ethanol: The alcohol that brings body and warmth to the beer.
  • Carbon dioxide (CO2): Responsible for carbonation and foam stability.
  • Aromatic by-products: This is where the magic happens. Depending on the strain and temperature, yeast produces esters (fruity notes: banana, pear) and phenols (spicy notes: clove, pepper).


2. Ale vs Lager: Mastering Temperature

The world of yeast is divided according to working temperature. But be careful: temperature is not just a constraint — it is a quality lever.

  • Saccharomyces cerevisiae (Ale): Works between 18°C and 24°C. Very expressive (IPAs, Belgian styles).
  • Saccharomyces pastorianus (Lager): Ferments at low temperature (8°C–12°C). Very clean (Pilsners).

Expert tip: If you have temperature control, start your fermentation at the lower end of the recommended range to avoid initial stress. Then increase by 2 to 3°C every 3 days toward the upper end. This limits off-flavors early on and speeds up the end of fermentation for perfect attenuation. If you don’t have temperature control, simply keep your fermenter in a room with stable temperature.


3. Dry Yeast or Liquid Yeast?

Each format has its advantages depending on your equipment and goals:

  • Dry Yeast: This is the standard format for most homebrewers. It keeps for a very long time, offers a major economic advantage, and is just as viable as a liquid strain. In addition, the variety of strains available is growing rapidly. (Our most popular brands: Fermentis, Lallemand and WHC Lab).
  • Liquid Yeast: It offers a very wide diversity of strains for brewers seeking authenticity (specific abbey strains, wild yeasts). It often requires making a starter (yeast propagation).


4. Attenuation and Flocculation: Key Indicators

When choosing your yeast, always pay attention to these two parameters on our product sheets:

  • Attenuation: The percentage of sugar the yeast can ferment. High attenuation gives a dry beer; low attenuation leaves more body and sweetness.
  • Flocculation: The ability of yeast cells to clump together and settle at the bottom of the fermenter. High flocculation ensures a clearer beer more quickly.
