Dextrose, often called "corn sugar", is the number one precision tool for brewers, whether home or professional. Its simple sugar structure (monosaccharide) allows yeast to assimilate it instantly, with no digestion effort.

Unlike regular table sugar, it ensures a fast, complete fermentation that is free from off-flavours, making it an essential ally for carbonation and alcohol management.

1. Why choose Dextrose over table sugar?

This is a recurring question in brewing. Although table sugar (sucrose) can be used, dextrose offers two major technical advantages:

  • Fermentation purity: Sucrose must be “broken down” by the yeast before it can be consumed, a process that can generate undesirable aromatic compounds such as cider-like or green-apple notes. Dextrose is assimilated directly, ensuring a neutral profile.
  • Perfect dissolution: Its very fine granulation allows immediate dissolution, preventing clumps of undissolved sugar at the bottom of fermenters or bottles.


2. Priming at bottling: Precision dosing

Dextrose is ideal for naturally creating your CO₂. Its consistency helps avoid flat beers or, on the opposite end, dangerous overpressure:

  • Standard dosage: For most styles, aim for 6g to 7g per liter.
  • Style adjustment: You can go down to 4g/L for English Stouts or up to 9g/L for highly carbonated wheat beers (Hefeweizen).


3. Use during fermentation: Boost alcohol without adding heaviness

Added during the boil, dextrose helps “clean up” your beer’s profile:

  • Drying the finish: By replacing part of the malt (up to 10–15%), you increase alcohol while reducing residual body. This is the secret behind dry West Coast IPAs or highly drinkable Belgian Tripels.
  • Visual neutrality: Completely colorless, it increases the strength of very pale beers without altering their appearance.

For bottle priming, always prepare a “syrup”: boil your dose of dextrose with a little water for 5 minutes. Mix this syrup into your entire batch before bottling to ensure perfectly consistent carbonation in every bottle.

There is no need to cool the syrup — the quantity is far too small to harm your beer.
