Over the past few years, a small technical revolution has been shaking up the homebrewing world and gaining ground in craft breweries: pressure fermentation (also known as the isobaric method).

Long reserved for industrial setups, this method is now accessible to everyone thanks to a new generation of suitable fermenters. But in practical terms, why should you abandon your traditional airlock and start fermenting your beer under pressure?

What is pressure fermentation?

In a classic (atmospheric) fermentation, the carbon dioxide (CO₂) naturally produced by yeast escapes freely through the airlock. In pressure fermentation, a sealed, airtight fermenter equipped with an adjustable pressure‑relief valve (called a Spunding Valve) is used. This traps part of the CO₂ inside the vessel, maintaining a constant pressure (generally between 0.8 and 1.5 bar) throughout fermentation, or allowing the beer to naturally carbonate.

This technique is so successful because it solves several major challenges for brewers:

Which fermenter should you choose: PET or Stainless Steel?

To get started, you absolutely need a certified “isobaric” fermenter capable of withstanding pressure. Two main options exist depending on your budget and goals:

Pressurisable PET fermenters (FermZilla, Snub Nose...)

This is the ideal and most affordable entry point for testing pressure fermentation. Made from ultra‑resistant technical plastic, these fermenters are transparent: you can watch yeast activity and sedimentation in real time. They are perfect for 20 to 35‑litre batches and fit easily in most household fridges. However, be careful: they cannot handle liquids above 50°C. And while the transparent design is fun, remember that beer hates light (UV), so we recommend keeping the fermenter in a dark place or under a cover.

Stainless Steel Fermenters (Unitank, Speidel...)

The premium, long‑lasting choice. A stainless‑steel isobaric fermenter is a lifetime investment. It provides total protection from light (preventing light‑struck hop flavours) and oxygen. Fully heat‑sterilisable and scratch‑resistant, it allows you to handle large volumes (from 30L to over 100L) with maximum safety. It’s the essential tool for advanced brewers or future microbreweries.

First, Lagers and Pilsners: pressure allows you to ferment a bottom‑fermenting yeast at 18°C instead of 10°C without producing fruity esters, cutting production time in half. Second, Hazy IPAs and NEIPAs: by eliminating all oxygen exposure during transfers or dry hops, you preserve the bright yellow colour and tropical fruit notes of your favourite hops, without the risk of your beer turning brown from oxidation!
