Brewhouse efficiency is the calculation that measures how effectively you extract the sugars contained in your malts. A good efficiency allows you to reach your recipe’s target gravity precisely, without having to add extra grain blindly.

While the crush plays an initial role, it is during the transition between mashing and boiling that most of the efficiency is determined.

To achieve optimal sugar extraction without pulling unwanted tannins, here are the golden rules to follow during lautering and sparging:

1. Recirculation: Creating the perfect filter

Before sending your wort to the boil kettle, it’s essential to stabilise the grain bed. During mashing, fine flour particles float in the liquid. If you open the valve immediately, these particles will end up in your beer, causing haze and reducing efficiency.

  • On a traditional system (without a pump): Gently open the valve of your lauter tun and collect the first litres of wort in a pitcher. This liquid will initially be very cloudy. Pour it back very gently over the top of the grain bed (using a skimmer or spoon to avoid digging channels). Repeat several times: as you go, the malt husks settle and form an increasingly tight natural filter. Once the wort runs perfectly clear, you can direct it to your boil kettle.
  • On an automatic system: Good news — this step is already taken care of! The built‑in recirculation pump, which runs continuously throughout the mash, performs this clarification and sedimentation automatically. Your wort is already ready for sparging.


2. The art of sparging: Rinsing the grain without rushing

Sparging consists of pouring hot water over the grain bed to dissolve and carry the dense sugars still trapped in the spent grain. To succeed, technique matters more than speed.

  • Managing water temperature: Your sparge water must be precisely heated between 75°C and 78°C. Water that is too cold will trap sugars, lower your efficiency, and require extra heating power to reach the boil. Water above 80°C will extract tannins from the malt husk, giving your beer an unpleasant astringency (like over‑steeped tea). Using a dedicated sparge water heater helps maintain the ideal temperature throughout the process.
  • Avoiding channeling: The classic beginner mistake. If you pour sparge water too quickly or in a single central point, it will dig a tunnel through the grain bed. Since liquid always follows the path of least resistance, all your sparge water will rush through that hole without rinsing the rest of the grain. For optimal extraction, water must be distributed very gently — ideally with a sparge arm, or by pouring over a plate or skimmer placed on top of the grain bed to spread the flow evenly.
  • Taking your time: A good sparge must be slow. The more gradually the water passes through the grain bed (15 to 30 minutes depending on volume), the more time it has to pick up sugars.
