In brewing, sugar is far more than simple yeast fuel. It is a true design tool that can correct or enhance a recipe. Depending on its nature, a sugar may either fully disappear to boost alcohol and lighten the body, or remain present to bring roundness and sweetness.

The brewer’s craft lies in choosing the right molecule: should you prioritise full fermentability or residual structure?

1. Alcohol and Lightness Goal: The “Drying” Sugars

If your goal is to increase the alcohol level without ending up with a heavy or cloying beer, you should turn to sugars that are 100% fermentable:

  • Dextrose (Corn sugar): The king of clean fermentation. It is fully consumed by the yeast, leaves no residual flavor, and “dries out” the beer. Ideal for Double IPAs or strong beers where you want to avoid an overly “malty” character.
  • White Candi Sugar: Widely used in Belgian Tripels, it allows you to reach high gravities while keeping the beer very drinkable (the famous “drinkability”).


2. Body and Sweetness Goal: The “Structuring” Sugars

Conversely, if your beer feels too watery or if you’re brewing a style that requires creaminess, you need sugars that yeast cannot ferment:

  • Lactose: It brings a milky sweetness and a creamy mouthfeel. It’s the magic ingredient in Milk Stouts and Pastry Sours.
  • Maltodextrin: Less sweet than lactose, it is unbeatable for adding body and improving head retention without altering the aromatic balance of your recipe.


3. Color and Character Goal: Brown Candi Sugar

Here, the goal is not only technique but also flavor signature and the heritage of classic styles:

  • Brown Candi Sugar: Beyond alcohol, it brings caramel, molasses, and ripe fruit notes. It is the essential ingredient for building Belgian Dubbels or Quadrupels and giving them their deep amber color.

Don’t think of adding sugar as “cheating” compared to malt. See it as a technical adjustment tool. Adding 5 to 10% dextrose can transform a massive Imperial Stout into a more balanced beer. Conversely, 200 g of maltodextrin can save a beer whose mash was accidentally too low in temperature.
