Thiol Unleashed 11 g is a hybrid dry yeast designed for homebrewers seeking highly aromatic modern beers. Selected for its ability to release volatile thiols during fermentation, it enhances notes of tropical fruit, citrus, passion fruit and blackcurrant.
Thiols such as 3MA (grapefruit), 3MHA (passion fruit) and 4MMP (blackcurrant) occur naturally in hops and malt, but often in bound, non‑aromatic forms. Thiol Unleashed enables their enzymatic release, increasing aromatic complexity without adding more hops.
The strain is a hybridised Saccharomyces cerevisiae, combining the fermentation performance of brewing yeast with the thiol‑releasing ability of non‑brewing species — but without associated drawbacks (phenols, low attenuation).
