The Mangrove Jack’s CR51 yeast is a neutral‑profile oenological strain designed to produce light, dry red wines intended for early drinking. Its steady top‑fermentation consistently leads to full dryness, resulting in lively, clean wines with a precise structure.
This yeast contributes very little aromatic character: aromas come exclusively from the grapes or fruits used. It produces little glycerol, which results in a light to medium body and a taut mouthfeel. It is perfectly suited for Pinot Noir, Gamay and fruit wines. With a tolerance of up to 14% ABV, it delivers dry, precise and elegant wines.
Why choose this product?
- Neutral aromatic profile: fully respects the grape and fruit character.
- Ferments to full dryness: dry, lively and structured wines.
- Light to medium body: low glycerol production, ideal for young wines.
