The Styrian Kolibri hops is an aromatic hop variety originating from Slovenia. It was developed by the Slovenian Institute for Hop Research and Brewing in Žalec. It is a cross between a European Golding and an American hop.
The Styrian Kolibri hops primarily provides fruity aromas of blackcurrant, blueberry, and pineapple, floral notes of elderflower, geranium, and lemon balm, as well as spicy flavors of pepper and lemongrass. This hop is mainly used in late boiling, Whirlpool, and Dry hop.
This subtle hop integrates wonderfully into classic European styles, particularly Pilsners and Kölschs. It will also be a very good ally of Bitter and other English beers. Although it is subtly aromatic, it can also contribute to the structure of modern IPAs, as its interesting beta acid rate will allow flavors and bitterness to be well maintained over time.
