Simcoe hops is a versatile variety that comes from the United States. It was developed by Yakima Chief Ranches in 2000. With a high percentage of alpha acids and low cohumulone, it makes an excellent base for bitterness. However, it is in aroma that it will reveal its full potential.

The composition of Simcoe hops gives the beer specific aromas of grapefruit, passion fruit, pine, and berries. In Dry Hop, Simcoe hops will mainly bring notes of tropical fruits. Its optimal use will be at the end of boiling, Whirlpool, and hopping in primary fermentation.

It is frequently used for American-style beers, such as IPAs (in all their forms) and pale ales.
