In this Christmas Barley Wine recipe, you will find a beautiful roundness, complex aromas of cereals, caramelized biscuit, and toffee, complemented by a slight herbal touch and notes of dried fruits (raisin, apricot, pear).
These fruit notes will pair wonderfully with warm spices like nutmeg, cinnamon, and ginger.
The whole is enveloped in a gentle alcoholic warmth, but not aggressive, making it a perfect Christmas gingerbread. As it ages for a few years, a slight Madeira-like character will develop, adding even more pleasant complexity to the beer.

The pack includes the malt, hops, ginger, and yeast necessary for the recipe, for a 16-liter brew*. However, we cannot provide cinnamon and nutmeg.
*This recipe requires a lot of water as it needs a minimum 2-hour boil. To accommodate most brewing vessels, we decided to offer a 16L quantity instead of our usual 20L.
