Brew Thales: our French American IPA recipe

Thales is a French American IPA that blends the resinous intensity of American IPAs with the fruity and spicy expression of the French hop Teorem. Simcoe brings its classic pine, citrus and resin character, while Teorem adds a modern and local twist: pineapple, citrus, spices, with strong aromatic impact thanks to its T45 format.

The malt base — Pale Ale, Munich, Amber Caramel and Carapils — provides body, color and a texture perfectly suited to this hybrid style. The WHC LAX yeast, clean and efficient, ensures a crisp fermentation while letting the hops shine.

The result: a resinous, expressive IPA with a firm yet controlled bitterness, and an aromatic profile rich in stone fruits, resin and spices. A true meeting point between American tradition and French hop‑growing expertise.

Why choose this product?

  • A Simcoe / Teorem duo with resinous, fruity and spicy aromas.
  • An old‑school malty base for a rich, balanced texture.

Rolling Beers Tips

  • For a sharper bitterness: aim for a water profile with twice as many sulfates as chlorides.

  • A 48‑hour cold crash improves clarity and aromatic stability.

Product FAQ
