Pepito Blues is a truly comforting liquid embrace created by Alexandre Lemoine, certified Cicerone beer expert and founder of the Hop & Brol brewpub in Saint‑Gély‑du‑Fesc. Imagined as a tribute to English tradition and the authentic profile of Irish Stout, this black beer with ruby highlights (63 EBC) offers a perfect balance between roasted character and high drinkability.
The recipe is built on a rigorous selection of grains: the renowned Maris Otter malt provides a rich malty base, Roasted Barley gives the iconic dark colour along with delicious notes of coffee and toasted bread (without the harsh chocolate astringency), while barley flakes bring roundness and an incomparable velvety mouthfeel.
On the hopping side, traditional Fuggles supports the gentle bitterness of roasted barley (23 IBU), adding subtle floral and herbal nuances. Fermented with SafAle S‑04 at 20 °C, it delivers a clean, neutral profile that lets the grain character shine. A true liquid blues to enjoy every day!

Rolling Beers Tips
- Hop weighing: We provide a sealed 100 g bag of Fuggles hops. As we cannot package hops in smaller portions, you must weigh precisely 30 g for the initial boil and 20 g for the last 15 minutes. Store the remaining hops tightly sealed in the freezer for future brews!
- Single‑step mash: Heat your water to 68 °C before adding the grain. Stir well to avoid clumps; the temperature will naturally settle at 66 °C. Hold this rest for 60 minutes to extract sugars while keeping body.
- Light priming sugar: Traditional stouts require low carbonation. At bottling, do not exceed 4–5 g/L of sugar to achieve gentle effervescence and creamy foam (2.2 volumes of CO₂).

- Why is there leftover hops? Fuggles is supplied in a standard 100 g bag to preserve aroma. You only need 50 g total (30 g + 20 g). The rest can be used for other English‑style recipes.
- Will the beer be too bitter or burnt? Not at all. The balanced use of Roasted Barley combined with barley flakes gives smooth coffee and toasted bread notes without the astringency found in stronger stouts.
- Is this recipe suitable for beginners? Yes, the difficulty level is “Easy”. It uses a classic single‑step mash at 66 °C and a simple 60‑minute boil.
