Description
Discover Pernicious Weed, a DIPA that’s both old school and distinctly modern. This recipe comes straight from Jordan, the founder of PikNZell.
Jordan supplies most of the New Zealand hops we sell at Rolling Beers. He harvests them himself at the PIKIMAI HOPS farm in New Zealand.
Beyond being our “Mister New Zealand,” Jordan is also an excellent brewer who knows exactly how to showcase his hops.
The generous malt base of this DIPA, enriched with Carared and Carapils, develops a pleasant roundness that balances a bold and persistent bitterness. The New Zealand hops Rakau and Nelson Sauvin, used at various stages — mash hopping, flame-out, and double dry hop — bring a complex aromatic intensity, blending tropical fruits, resin, and hints of white wine.

"After a thorough lab analysis of the thiols and their precursors in my hops, I focused on biotransformation for this recipe. P4SMP, highly present in Rakau, promises beautiful aromas of boxwood, blackcurrant, and sauvignon. But to unlock them, its precursors must be released — and mash hopping is the ideal method. To avoid waste, this hop is then reused for bittering during the boil.
The free thiols, very fruity, are introduced to the yeast via a light dry hop during primary fermentation to complete the aromatic profile.
I also chose Nelson Sauvin at the end of the boil and in the whirlpool to release its 3SH compounds, which offer a subtle blend of citrus and tropical fruits. Finally, a second dry hop adds a fresh fruity touch to the tasting experience.
These aromas are supported by the strength of the beer and the use of slightly old-school cara malts."

Ingredients (provided):
- - 5.7kg Pale Ale Malt
- - 0.5kg Carared Malt
- - 0.15kg Carapils Malt
- - 2x100g Rakau Hops
- - 2x100g Nelson Sauvin Hops
- - 2 sachets of Bry-97 yeast
To receive crushed malt, check the appropriate option.
Note: unfortunately, we can no longer offer hops by the gram, so you’ll need to weigh the correct amounts according to the recipe (120g total for Rakau and 160g for Nelson Sauvin).
