SafBrewTM LD-20 is the perfect solution for producing very dry, neutral lagers with reduced residual sugars. SafBrewTM LD-20 consists of active dry yeast and enzymes, and enables the production of beers with the same alcohol content, but with carbohydrates, including dextrins, reduced by up to 20%.
Ingredients: Yeast (Saccharomyces pastorianus), glucoamylase from Aspergillus niger (EC 3.2.1.3), maltodextrin, emulsifier: sorbitan monostearate (E/INS 491).
- Total esters: low to medium
- Total higher alcohol: low to medium
- Apparent attenuation: 98-102%.
- Flocculation: very strong
- Sedimentation: rapid
Fermentis dry brewing yeasts are renowned for their ability to produce a wide variety of beer styles. To compare our strains, we carried out laboratory fermentation trials using a standard wort for all strains and standard temperature conditions (SafLager: 12°C for 48 h, then 14°C - SafAle: 20°C). Given the impact that yeast has on the quality of the final beer, we recommend that you follow the prescribed fermentation instructions.
Fermentation time: optimal 12-20°C
Inoculation: Sprinkle dry mixture into at least 10 times its weight in sterile water or boiled wort and hops, at 20-28°C. Leave to stand for 15-30 minutes, stir gently and inoculate the resulting preparation in the fermenter. Direct inoculation is also possible, depending on your equipment, habits and preferences, at a temperature between 12 and 20°C SafBrew™ LD-20 is not suitable for reseeding or for bottle or keg conditioning.
Dosage instructions: 160 to 240 g/hl.
