FERMO Brew Acid is a natural yeast (Lachancea thermotolerans) distinguished by its ability to produce lactic acid from the early stages of alcoholic fermentation. The manufacturer does not recommend rehydrating the yeast before inoculating it into the wort. However, if the initial gravity is very high, you can hydrate it in sterile water at a ratio of 1:10.
