The Ahtanum hop is an aromatic variety created by Yakima Chief Ranches. Its lineage is unknown, but it was open-pollinated.
Its organoleptic composition means it will express its full potential in post-fermentation Dry Hop. Its Cryo form will give beautiful grapefruit flavors, floral geranium tones, resinous notes, and a very slight earthy touch.
This hop has an exceptional rate of beta acids. It will thus preserve the overall bitterness of the beer and the balance of flavors over the medium/long term. In West Coast IPAs where bitterness is quite sought after, it can be a great structural ally (beyond its beautiful aromas). It can even be a very interesting aromatic and structural kick in a modernized Bitter.
Ahtanum is often used for American-style beers, such as IPAs, Pale Ales, or Lagers.
