Why can't a pH meter be used to measure must acidity ?
Measuring acidity in winemaking concerns the production of a certain quantity of acid in your wine or must, expressed in grams of tartaric acid per liter. This can only be measured with the blue reagent.
What is pH ?
pH measures the concentration of free hydrogen ions in a solution. For example, the pH of pure water is 7. Liquids with a higher concentration of hydrogen ions than pure water are acidic and have a pH below 7, while those with a lower concentration are basic (alkaline) and have a pH above 7. The pH scale ranges from 1 to 14.
Combined use of pH meter and blue reagent :
Instead of adding the reagent until the blue color appears, you add the blue reagent until you reach a pH of 7.00. This method is more accurate and easier to interpret, especially for red juices! The combination of pH meter, blue reagent and automatic burette is a professional technique for measuring acidity with great precision.
