The Chit Barley malt is barley that has undergone only the very beginning of germination before being kilned. This specific process preserves a high quantity of high‑molecular‑weight proteins. Unlike standard malt, it is mainly used as a corrective ingredient to improve the physical properties of beer without significantly altering its aromatic profile or colour.

Technical FAQ
Does Chit Barley require a specific temperature rest?
Although a standard single‑infusion mash works fine, a short protein rest may be considered if using a high percentage, even though the purpose of this malt is precisely to preserve these proteins for foam stability.
Does this malt add colour to the beer?
Very little. With an EBC between 2 and 3.5, it is almost as pale as a Pilsner malt and will not affect the colour of your pale beers.
