Description
Chocolate malt, equivalent to Carafa® I by Weyermann, is carefully roasted to offer a unique palette of flavors and colors. It gives beer an intense coffee-brown hue (800 to 1000 EBC), along with deep aromas of dark chocolate and cocoa. This malt also helps to enhance the body of the finished beer.
Ideal for dark beers that highlight gentle roasted aromas, it provides a pronounced yet subtle roastiness while adding delicate nuances. In small proportions, it acts as a coloring agent, enhancing dark chocolate notes. The higher the proportion used, the more the flavors will lean towards coffee or toasted bread notes.
Recommended at a maximum proportion of 5%, it can be used alone to achieve delicate cocoa flavors or in combination with other malts to balance roasted aromas and create a tailored aromatic profile.
