Description
Amber caramel malt, equivalent to Caramunich® II, is both an aromatic and versatile malt. Its caramelization gives it a deep amber hue (100 to 120 EBC), close to brown, and a rich, complex aromatic profile. It features intense caramel flavors leaning towards dark caramel, accompanied by notes of biscuit, honey, dried fruits, and bread crust, offering a subtle and pleasant sweetness.
In addition to its aromatic qualities, amber caramel malt enhances the beer’s smoothness while contributing a caramel taste reminiscent of candy. It also helps stabilize the beer and improve foam retention.
Its usage, which can range from 5 to 25% depending on the styles and objectives, adds remarkable richness to the beer. This malt is perfectly suited for strong beer recipes where the malty character takes center stage, such as Dubbel, Doppelbock, Brown Ales, or Dark Lagers.
