Description
Wheat caramel malt stands out for its rich and complex aromatic profile. It develops characteristic intense caramel flavors, accompanied by notes of almonds, biscuit, brioche, and toasted bread. This malt imparts a subtle and pleasant sweetness while adding a deep copper hue (90 to 110 EBC), ideal for enhancing the color and character of beers.
This unique taste comes from a specific production process: the malt is heated while its moisture content is still high, triggering a Maillard reaction. This process helps develop caramel flavors and reduces astringency, thanks to the absence of a husk in the grain, resulting in a smoother caramelized profile compared to barley malts.
Like all wheat malts, it has a high protein content, which enhances the beer's creamy texture and improves foam retention. The use of this malt is recommended up to a maximum of 15% to optimize its aromatic and textural contribution to recipes. Traditionally used in beers such as Dunkelweizen, this malt also integrates perfectly into Belgian beers like Witbier or any recipe seeking a smooth caramelized sweetness.
