When asked “should you choose a hydrometer or a refractometer?”, a professional brewer will naturally answer: both!
These two measuring tools are essential and complementary, but each has very different advantages and limitations depending on the stage of your beer production.

1. The Hydrometer: Unmatched precision during fermentation
The hydrometer remains the most reliable traditional tool for measuring the density of a liquid during or at the end of fermentation. Its operation is simple: it floats more or less high in the liquid depending on the sugar concentration.
Its major strength: It is extremely accurate for measuring fermented wort. Unlike the refractometer, the presence of alcohol in the beer does not distort its direct reading. You read the final gravity (FG) instantly on the scale without needing any conversion calculation.
Its limitations: A classic hydrometer is calibrated for strict measurement at 20°C. If you take a hot wort sample during mashing or boiling, you must cool your sample in a test jar before reading it, otherwise the measurement will be inaccurate (or you may break the glass). It also requires a large sample volume (around 100 to 250 ml). Repeating this too often during fermentation can lead to a non‑negligible loss of beer for homebrewers.
2. The Refractometer: Speed and spontaneity when working hot
The refractometer measures how light is refracted through the liquid to determine its sugar content (usually expressed in Brix or specific gravity).
Its major strength: It is the perfect tool for brew day. It provides an almost instant reading and requires only a few drops of wort taken directly from the kettle. Most of our models include automatic temperature compensation (ATC). Even if the wort is hot, placing just two drops on the glass prism cools it within seconds, allowing immediate checks during sparging or boiling.
Its limitations: As soon as yeast begins producing alcohol, light is refracted differently. A refractometer cannot directly measure the density of fermenting beer without giving a completely incorrect value. To use it after pitching, you must use an online correction calculator that adjusts the reading based on your original gravity (OG).
