SafSpirit™ M‑1 is the most traditional strain for producing Scotch and single malt whiskies. It develops a characteristic “M” aromatic profile, fully respecting the expression of the grain and raw materials, making it a reference for barrel‑aged spirits.
Thanks to its high alcohol tolerance (> 15% ABV) and natural amylolytic capacity, it ensures excellent attenuation, including on complex sugars and dextrins. It is therefore an ideal solution when enzyme additions are not permitted. Its robustness also makes it a good choice for continuous fermentation.
The professional 10 kg carton format meets the needs of distilleries seeking a stable, high‑performance yeast suitable for large‑scale fermentations.
Why choose this product?
- Traditional strain for Scotch, single malts and barrel‑aged spirits.
- Very high attenuation thanks to the utilisation of complex sugars and dextrins.
- High alcohol tolerance (> 15% ABV) and robust fermentation (20–32 °C).
