BrewLine Yeast – Rock Ale 500g

BBD (Best Before Date): 25 March 2026
The BBD shows the manufacturer guarantees 100% quality until this date. Afterwards, it remains safe to use but may gradually lose some organoleptic properties.

Rock Ale is a fast-fermenting yeast widely adopted by craft breweries for its exceptional aromatic intensity, combining fruity, floral, and spicy notes.

With its rich aroma profile, high attenuation, and low sedimentation, it’s ideal for brewing light and refreshing beers.

Used in many award-winning brews, Rock Ale enhances brewers’ unique recipes and raises them to a level of excellence.

Characteristics:

  • - Flocculation: Low
  • - Final attenuation (17 °C–22 °C): 85%
  • - Alcohol tolerance (%vol): 7.5%
  • - Diacetyl production: Low
  • - Fermentation kinetics: Fast (4–7 days*)
  • - Recommended dosage: 50 – 100 g/hL

They use Rock Ale:

"At Moulins d'Ascq, we regularly use the Rock Ale strain in our witbier. Thanks to its low flocculation, it gives a more pronounced haze to our finished beer. It also helps to enhance the spice aromas added during the boil, like orange peel and coriander. It's remarkably consistent in terms of repeatability."

Thomas Roels – Brewer at Moulins d’Ascq, an organic brewery since 1999
