They use Folk Ale:
"The Folk strain provides a perfectly balanced aromatic profile for a Belgian-style beer, blending spicy and floral notes. Used for my Tripel, it ferments high-density wort quickly without producing alcoholic harshness. It delivers the roundness sought for the style without making the result heavy or cloying. Excellent value for money in this product range."
