1. The “Survivables”: The champions of resilience

Not all hop oils are equal. Myrcene, although dominant, is highly volatile and evaporates easily. For long-lasting aroma, the modern brewer relies on Survivable Compounds (Linalool, Geraniol) which withstand Whirlpool heat.


2. The revolution of Thiols and Mash Hopping

Thiols are the molecules responsible for guava and passion fruit notes. While some hops naturally contain high levels, a large portion remains “bound” and undetectable.
