Melano malt:
Melano malt has a very intense malty flavor. It will bring beautiful biscuity and honey notes. It will also give body to the finished beer.
It's a perfect match for any beer where the malt is to the fore. What's more, when the brewer isn't equipped to brew by the decoction method, Melano malt will give a similar toasty aromatic effect.
Melanoids are formed when barley sugars react with amino acids at high temperature (usually at boiling point). They are desirable flavor components in malts. The other two malts with a high melanoid content are Vienna and Münich. However, melano is much richer in melanoids, which is why we don't recommend using more than 20%.
This malt also gives the beer a golden to slightly amber color.
