Selected for its ability to release volatile thiols during fermentation, it enhances notes of tropical fruit, citrus, passion fruit and blackcurrant thanks to its targeted β‑lyase activity.
Thiols such as 3MA (grapefruit), 3MHA (passion fruit) and 4MMP (blackcurrant) occur naturally in hops, malt or certain fruits, but often in bound, non‑aromatic forms. Thiol Unleashed enables their enzymatic release, drastically increasing aromatic complexity without additional hop input.
The strain is a hybridised Saccharomyces cerevisiae, optimised to combine the fermentation performance of a brewing yeast with the thiol‑releasing capacity of non‑brewing species — but without associated drawbacks (phenols, low attenuation).
