Description
Purified enzymatic preparation based on gluco-amylase. For a total breakdown of starch. It acts during mashing, on saccharification, producing dextrins and glucose.
Endozym AMG is used to facilitate the hydrolysis of starch and its rapid transformation.
It is also prized for the production of dietary beers with low residual carbohydrate content.
Endozym®AMG can also be used in fermentation to increase the amount of fermentable sugars.
Composition: Glucoamylase.
Capacity: 1 litre.
ORIGIN: derived from the controlled fermentation of a fungal strain of Aspergillus niger.

Advantages of Use:
- ENDOZYM® AMG hydrolyzes the α-1,6 and α-1,4 glycosidic bonds of starch to release individual glucose units and deconstructs the amylopectin branches.
- Maximizes the conversion of starch into fermentable sugars.
- Promotes the production of highly attenuated beers.
- Ensures regular and consistent fermentation, even when using different raw materials or adjuncts.
- Allows the production of beers with low residual sugar content, such as light or low-calorie beers.
Dosage and Use:
The typical dosage is 50 to 100 ml per 100 kg of malt or unmalted/adjunct grains.
We recommend adding the enzyme during mashing, ensuring it is well mixed.
TEMPERATURE RANGE: 50-75°C / 122-167°F
Optimal Temperature: 65°C / 149°F
pH RANGE: 3.0 to 5.5
Optimal pH: 4.0
