The potassium Campden sulfite is a potassium metabisulfite powder used in brewing, winemaking and cider making. Versatile, it acts as a disinfectant, antioxidant and chlorine neutraliser in brewing water. It can also inhibit wild yeasts in wort or stop a fermentation.

In brewing, it is particularly useful for removing chlorine and chloramines, responsible for off-flavours such as “plastic” or “band‑aid”. A very small dose is enough to secure the brewing water before mashing.
