Indeed, the puree, more than frozen or whole fruits, ensures an ideal contact with the liquid. This means an optimal flavor transfer.
After a good Cold Crash, the puree will settle more easily than other mango formats at the bottom of the fermenter. This allows for perfect filtration. Another advantage, and not the least, it helps to avoid any risk of gush and loss associated with fruit beers.
