Adds a deep cereal taste. Improves foam retention.

Wheat flakes:

Adding wheat flakes during brewing adds a silky-smooth flavor. They also add a slight acidity and a deeper cereal taste. As these flakes are not malted, they have a very high protein content. This increases and improves the beer's head. They can also accentuate the cloudiness of white beers.

Wheat flakes are often used in Lambics, saison or witbier, a recipe (only in french) for which is given below.

When used above 20%, we recommend a mashing step at 50°C for 10 minutes, or simply using rice husks to help filtration.
