Amber Malt:

Amber Malt, from the English malt house Simpsons, is the manufacturer's lightest roasted malt. This malt, similar in base to maris otter, passes through the roasting column to obtain a unique flavor.

The degree to which it is roasted gives amber malt bread and cookie flavors, with notes of roasted hazelnuts, a slight hint of caramel and a hint of earthiness.

This malt gives the beer a lovely amber color with red highlights, and can be used up to around 5% of a recipe. It will go very well in English beer styles where you want to put a little accent on the malt.
