Description
FERMO Brew Citrus is an aromatic yeast obtained through hybridization. It is ideal for the production of specialty beers with a complex aromatic profile featuring citrus and vegetal notes.
Due to its low nutrient requirements, this yeast offers a pleasant organoleptic profile from the early stages of fermentation. This characteristic also allows for the production of low-alcohol or non-alcoholic beers by interrupting fermentation through reducing the fermentation tank temperature (<0.5% vol).
FERMO BREW CITRUS intensifies active thiols in aroma at the beginning of fermentation. Phenolic compounds (POF+) are generated in the later stages of fermentation.
Yeast nutrients from the FERMOPLUS range (such as Fruity) further enhance the aromatic profile. For low-alcohol beers, pH correction is recommended. Despite its high alcohol tolerance, FERMO BREW CITRUS produces low alcohol volumes during fermentation, making it particularly suitable for brewing low-alcohol or non-alcoholic beers.

The manufacturer does not recommend rehydrating the yeast before inoculating it into the wort. However, if the initial gravity is very high, you can hydrate it in sterile water at a ratio of 1:10.
Possible alternatives:
This yeast is a unique hybrid specific to AEB brewing. However, two strains have similar fermentation properties.
