The Nelson Sauvin is world‑renowned for its “terroir wine” aromatic profile, reminiscent of Sauvignon Blanc. At Rolling Beers, we are proud to offer you a selection from Pikimai Hops, an independent New Zealand farm distributed by PikNZell. Unlike standard market offerings, the lots from this farm show a higher concentration of oils and alpha acids, generally ranging between 14 and 16.5%.
This versatile hop can be used both for bitterness (thanks to its high alpha content) and for its unique aromatic qualities at the end of the boil or in Dry Hop.
Two versions, two expressions of terroir
For this year, we selected two distinct plots from the Pikimai farm to offer you two complementary aromatic profiles:
- Standard Harvest: The classic and powerful Nelson Sauvin profile. Expect its iconic notes of gooseberry, pressed white grape and passion fruit. This is the very essence of New Zealand hops.
- Early Harvest (Single‑Plot Selection): From a specific field harvested earlier, this version shows a record alpha acid level of 16.3%. Its profile is radically fruitier and softer: white peach, lychee, gooseberry and, as Jordan from PikNZell highlights, pronounced kiwi notes.

Brewer’s tip
- Best styles: Essential for NZ IPA, NEIPA, Brut IPA or even modern “terroir lagers”.
- Usage: Nelson Sauvin is very intense. In Dry Hop, it can overpower other hops. For a balanced tropical profile, pair it with Motueka or Citra.
- Early Harvest: Use it specifically if you want a “fruit sorbet” character (peach/kiwi) without the astringency sometimes found in very late harvests.

Why is the alpha level so high?
The terroir of the Pikimai farm and the cultivation methods of Pikimai Hops result in a higher resin concentration than usual standards (often between 10 and 13%).
What is the main difference between the two harvests?
The standard harvest leans toward white grape and wine, while the early harvest is much more focused on stone fruits (peach) and soft exotic fruits (kiwi, lychee).
