Special granulated yeast for structured, high-quality red wines intended for barrel aging. Develops a complex, vital aromatic profile, with excellent color stability thanks to the release of polyphenols. It is capable of fermenting over a wide temperature range and releasing polysaccharides.
Vinoferm Grand Cru favors the development of malolactic fermentation. It develops typical, complex primary aromas, harmoniously integrating notes of spices, aromatic herbs and dried fruit.

Grape varieties:
Ideally suited to grape varieties such as Pinot Noir, Gamay, Lemberger, Cabarnet, Cabarnet Cortis/Cantor/Jura, Sangiovese, Dornfelder.
Dosage:
15-25 g/hl
Use:
Add 1 part yeast to 7 parts water and 3 parts must at 35-40°C. Allow to rehydrate for at least 15 minutes. Then add to the must. Make sure that the temperature difference between the bottom of the tank and the temperature of the wort in your fermentation tank is no greater than 10°C.
Shelf life :
Vacuum-packed. Store in a cool, dry place (<15°C, ideally 4-8°C). Use within 2 to 3 days of opening.
