Description
This unconventional brewing yeast strain, Saccharomycodes ludwigii, has proven particularly well suited for producing low‑alcohol or alcohol‑free beers.
It was selected for its low production of ethyl acetate, significantly lower than that of similar strains.
This species is maltose‑negative: it does not ferment maltose or complex sugars, but only glucose, sucrose and fructose.
The attenuation level will vary depending on the recipe and wort profile used.
This yeast is suitable for all NA beer styles or very low‑alcohol beers. Although classified as a “wild” yeast, it does not pose a spoilage risk since it cannot ferment more complex sugars.
Its use, however, requires an adapted recipe to produce an alcohol‑free or very low‑alcohol beer.
