Description
The organic amber caramel malt, often compared to Caramunich® II, is an ingredient both versatile and rich in aromas. Thanks to its caramelization process, it develops an intense amber hue (100 to 120 EBC), close to dark brown, while offering a deep and complex aromatic profile. It reveals pronounced caramel flavors, reminiscent of brown caramel, with delicate notes of biscuits, honey, dried fruits, and bread crust, bringing a subtle and refined sweetness.
This organic malt does more than enhance aromas: it also enriches the beer's texture, adding roundness and smoothness, while leaving a gourmet caramel imprint reminiscent of candy. Moreover, it helps stabilize the beer and improves foam retention for an optimal visual and gustatory experience.
With an incorporation rate ranging from 5 to 25% depending on styles and goals, this malt is ideal for imparting character and richness on the palate. It pairs particularly well with recipes for strong and malty beers, such as Dubbel, Doppelbock, Brown Ales, or Dark Lagers.
