Available in two versions: choose between the Standard Harvest, true to the classic “Sauvignon Blanc” profile, or the Early Harvest, a real burst of white peach, kiwi and lychee.

Nelson Sauvin is renowned worldwide for its “terroir‑driven wine” aromatic profile, clearly reminiscent of Sauvignon Blanc. At Rolling Beers, we are delighted to offer you a selection sourced from Pikimai Hops, an independent New Zealand farm distributed by PikNZell. Lots from this estate show an oil and alpha‑acid richness above market standards, typically reaching between 14 and 16.5%.

This highly versatile hop can be used both for bitterness (thanks to its high alpha content) and for its unique aromas in late boil additions or Dry Hop.


Two harvests, two interpretations of the terroir

For this season, we selected two distinct plots from the Pikimai farm to offer you two complementary aromatic expressions:

  • Standard Harvest: The iconic and intense Nelson Sauvin profile. Expect characteristic notes of gooseberry, pressed white grape and passion fruit. This is the most representative expression of New Zealand hops.
  • Early Harvest (Single‑Plot Selection): From a field harvested earlier, this version reaches an impressive 16.3% alpha acid. Its expression is noticeably softer and fruitier: white peach, lychee, gooseberry and, as Jordan from PikNZell highlights, pronounced touches of kiwi.

Brewer’s tip

  • Recommended styles: Ideal for NZ IPA, NEIPA, Brut IPA and modern “terroir lager”‑style Pilsners.
  • Usage: Nelson Sauvin is intensely expressive. In Dry Hop, it can easily dominate. For a balanced tropical profile, pair it with Motueka or Citra.
  • Early Harvest: Best suited if you’re looking for a “fruit sorbet” character (peach/kiwi) without the astringency sometimes found in very late harvests.

Why is the alpha content so high?
The terroir of the Pikimai farm and the cultivation practices of Pikimai Hops allow for resin concentrations significantly above usual standards (often between 10 and 13%).

What is the main difference between the two harvests?
The standard harvest highlights white grape and wine‑like notes, while the early harvest leans more toward stone fruits (peach) and soft exotic fruits (kiwi, lychee).
