YF‑998 Sour yes sour! is a liquid strain of Lactobacillus plantarum specifically designed for producing sour and tart beers. It acts quickly and cleanly, lowering the pH between 2.5 and 3.5 without forming spores. Active at 37 °C, it creates a bright acidity and dominant citrus notes while preserving the purity of the aromatic profile. Easy to control, it can be neutralized by boiling after acidification, offering great flexibility for both home and professional brewers.
