Fermentation sugar : 1 kg of sugar required. For an exceptional beer, use Beer Enhancer or Dark Dried Malt Extract (DME).

Bottling sugar : Approx. 5g to 6g per litre for a moderate carbonation that respects the style.

Consumables : 45-50 x 50cl bottles, crown caps (26mm), cleaning/sanitising solution.

The secret to body: Old Ale benefits immensely from being brewed with Dark Dried Malt Extract (DME) instead of white sugar. This strengthens the chocolate and liquorice notes and provides superior head retention.

The time factor: This is a beer that refines beautifully. While excellent after one month, it develops vinous and complex notes after 3 to 6 months of bottle conditioning.
