Brewline Yeasts

Brewline offers ale and lager strains. Their profiles meet the needs of all types of brewing. From classic Pils to Triples with distinctive esters, the possibilities are numerous and varied. All yeasts ensure optimal and reproducible fermentation conditions. The unique character of each strain has been studied by the “Brewing Sciences and Fermentation Technology” department of the Meurice Institute in Brussels.

Lager Yeasts

Classic Lager

Fans of Helles, Dopplebock, Schwarzbier, and other iconic Teutonic beers will find the “Classic Lager” yeast perfect.
Derived from the renowned W34/70 strain, originally from the Weihenstephan brewery, it superbly preserves the organoleptic qualities of malts and hops selected by the brewer.
Its neutral aromatic characteristics are maintained between 10°C and 18°C.

Hip Hop Lager

Equivalent to the renowned Nova Lager, Hip-Hop Lager is a neutral strain with exceptional flexibility. Moreover, it has excellent biotransformation capabilities.

This yeast is very easy to use and is ideal for standardizing production in the brewery. It can ferment across a wide range of temperatures :

•   From 12 to 15 degrees: rounded beers with a neutral profile, such as Berliner.
•   From 15 to 17 degrees: Altbier, Kölsch, Steam Beer.
•   From 18 to 22 degrees: perfectly suited for beers with Dry Hop (IPA, NEIPA).

Its neutral profile is also suitable for Export-style beers.

Ale Yeasts

Pop Ale

This strain represents the perfect combination of the renowned S04 and US-05. Highly versatile, its neutral to slightly fruity aroma makes it a valuable ally for a wide range of beers.

Pale Ale, Bitter, IPA, Stout, Amber Ale… From 15°C to 25°C, Pop Ale is ideal for ales where a subtle fermentation character is desired.

Rock Ale

Rock Ale est une levure rapide qui a déjà séduit de nombreuses brasseries Craft. Elle présente une grande intensité aromatique et des notes fruitées, florales et épicées.

Its aromatic profile, good attenuation, and low sedimentation make it ideal for producing light and refreshing beers.

From 15°C to 25°C, it will be ideal for wheat beers, saisons, blonde ales, and certain hoppy beers.

Folk Ale

Folk Ale is a strain perfectly suited for Belgian-style beers.

From 15 to 25°C, it expresses an aromatic profile with floral and spicy esters similar to Trappist beers.

Its authentic profile and medium attenuation ensure the smoothness and roundness of your beers.

It is well-suited for strong beers or those with a rounded character: Belgian Strong Ale, Dubbel, Quadrupel…

If you want well-defined esters and a pleasant dryness on the palate (for a Triple, for example), you can pair it with Pop Ale or Rock Ale yeast to ensure a residual attenuation > 25%.

Special Yeasts

Jazz Sour

Equivalent to the renowned Philly Sour, Jazz Sour (Lachancea Thermotolerans) stands out for its remarkably easy use.

It is capable of fermenting your wort to produce lactic acid and alcohol.
The acid production primarily takes place during the first days of fermentation (ideally between 20°C and 25°C).
Jazz Sour provides the typical freshness of sour styles while minimizing contamination risks.

La Jazz Sour peut être également utilisée en fermentation secondaire (basse avec la Classic Lager et haute avec la Pop Ale ou la Rock Ale).

This strain is widely used for bottle refermentation.
