Draille Hop Brewing: from passion to nanobrewery

In Saint‑Martin‑de‑Londres, at the foot of the Pic Saint‑Loup, a new microbrewery is about to emerge: Draille Hop Brewing, founded by Bertrand Bonnery.

His story is one that many homebrewers know well. It begins with a brewing kit (Rolling Beers) given in 2014. Then the brews follow one another, with their share of trials, successes, and failures…

And one day, the desire to take the leap.

Today, the equipment is installed. The recipes are ready. And Bertrand is only waiting for customs authorization to launch his production.

His journey perfectly illustrates the gradual progression experienced by many brewers: curiosity, learning, rigor… then professional structuring.

A nanobrewery rooted in its territory

The name Draille Hop refers to the drailles, those old transhumance paths that cross the scrublands of southern France. The brewery will offer resolutely hoppy, modern, and aromatic beers, with particular attention paid to:

  • the quality of raw materials,
  • the precision of the processes,
  • the balance between aromatic intensity and drinkability.

A clear positioning: modern beers, but deeply rooted in their terroir.

The equipment: a setup designed for consistency and control

To structure his microbrewery, Bertrand chose a coherent ensemble entirely based on equipment offered by Rolling Beers.
A setup that allows brewing with rigor, consistency, and safety — while remaining accessible to an experienced homebrewer wishing to go pro.

Brewtools B150 Pro – The heart of the production

The B150 Pro kettle is an automatic brewing unit designed for nanobreweries that want to combine precision, versatility, and ergonomics.

  • Fast and stable heating
  • Precise control of mash steps
  • Optimized circulation
  • Easy cleaning
  • Capacity suited to initial commercial volumes

For a brewer transitioning from the homebrewing world to the professional one, it is a tool that brings regularity, reproducibility, and working comfort.

Note: Brewtools has now replaced the B150 Pro kettle with the B180 model. Its capacity is slightly increased and allows brewing up to 160 / 170 L in a single batch.

Digiboil 65L

To accompany his Brewtools B150 Pro, Bertrand uses a 65 L Digiboil as a sparge water kettle. A very relevant choice for a microbrewery in its launch phase: the Digiboil offers an economical, robust, and immediately operational solution for managing hot sparge water.

Thanks to its fast heating and comfortable volume, it allows:

  • to prepare sparge water at a stable temperature,
  • to supply the B150 Pro without flow interruption,
  • to secure the necessary volumes for 150 L batches,
  • to simplify the hot‑side organization without heavy investment.

The Digiboil is often used by advanced homebrewers, but it fits perfectly in a small professional structure: reliable, modular, and easy to clean, it is an ideal and economical solution for productions of this size.

Bertrand also uses a steam lid to avoid fogging up his entire brewhouse.

4 × SS Brewtech Unitank 2.0 – 1 BBL – Professional fermentation

The 1 BBL Unitanks (158.9 L) have become a reference in small breweries:

  • fermentation + conditioning + service under pressure
  • precise temperature control
  • CIP compatibility
  • professional‑level safety and hygiene
  • versatility for all hoppy beers

With four tanks, Bertrand can launch several recipes, manage rotations, and secure his production schedule from the very first months.

SS Brewtech glycol chiller

Essential for professional fermentation, this glycol chiller provides:

  • individual control of the tanks
  • clean and consistent fermentations
  • fast and efficient cold crashes
  • optimal aromatic stability

For a brewery focused on modern hoppy beers, it is a key element.

Bertrand’s four fermenters are equipped with spunding valves (+ pressure gauges) to manage fermentation under pressure.

Hop Drop

The Hop Drop allows adding hops during fermentation without oxygen, without opening the tank, and without any risk of contamination.
A particularly relevant tool for a brewery focused on IPA, Pale Ale, and aromatic beers.

Boel iTap counter‑pressure filler

The Boel iTap is ideal for microbreweries that want to:

  • limit oxidation
  • quickly fill bottles
  • offer high‑quality packaging
  • preserve hoppy aromas

It fits perfectly into a small‑scale setup.

Various accessories – The coherence of the setup

Gaskets, Tri‑Clamp fittings, reinforced hoses, spunding valve, steam lid…
All the elements that allow working cleanly, efficiently, and safely.

How this equipment structures Draille Hop Brewing’s production

The entire installation allows Bertrand to:

  • professionalize his hygiene (CIP compatibility, glycol, Unitanks)
  • secure his fermentations
  • master his aromatic profiles
  • save time on cleaning and transfer cycles
  • produce modern beers with consistency

It’s a typical setup for microbreweries starting with ambition, but also an excellent example for advanced homebrewers who want to envision a move to professional brewing.

Bertrand’s words

I have been brewing since 2014, when I was given a Rolling Beers kit.
This passion has never stopped growing, eventually giving birth to Draille Hop Brewing.
The equipment I chose allows me to work cleanly, efficiently, and to focus on what matters: creating hoppy, modern, and balanced beers.

The Draille Hop Brewing Pack – Available at Rolling Beers

To support future brewers, we have gathered all the equipment used by Bertrand into a complete pack:

  • Brewtools B180 Pro
  • Digiboil 65 L
  • 4 × SS Brewtech Unitank 2.0 – 1 BBL (carbonation stones, pressure gauges, and sampling valves included)
  • SS Brewtech glycol chiller
  • Boel iTap counter‑pressure filler
  • Hop Drop
  • Tri‑Clamp accessories (clamp, gaskets, T‑fittings, elbow fittings, spunding valves…)

A pack designed for microbreweries producing 3–5 hL/month, or for very advanced homebrewers who want to structure their production.

Conclusion: a concrete example of a successful upscale transition

Draille Hop Brewing perfectly embodies the transition from the homebrewing world to a professional microbrewery: passion, rigor, learning… then structuring. Its setup is a model for anyone wishing to take the leap.
