To make easy cider, you don’t have to worry about it! Of course, using real fresh and organic apples will produce very beautiful results.

But there are several problems…

You have to choose the right apples and they are not all easy to obtain. To make 5 to 7 liters of cider, you would need at least 10kg of fruit! And we are not all equipped to grind all these apples.

Fortunately, the solutions are simple…

All you need is a 12.5L fermentation bucket, an airlock, and a few ingredients. The main one, a good apple juice. There are some excellent ones in the trade that are super simple to find.

Little bonus : at the end of the article, we will see 4 possible aromatic profiles by simply changing your yeast.

10L recipe to make Easy Cider :

  • 5 Liters of Pure Apple Juice (100% fruit preferably artisanal, organic or cloudy)
  • 5 Liters of hot water
  • 500g Table sugar
  • 1 packet of SafCider AC-4 yeast for a raw profile
  • OR 1 packet of SafCider AS-2 for a smooth profile

Making Easy Cider (≃6.5% ABV) Step by step :

Step 1

In your fermentation bucket, pour 5l of hot water (about 80°C).

Step 2

Dilute your 500g of table sugar in hot water. You can use a whip or a spatula.

Step 3

Pour all of your apple juice into the sugar/water mixture.

Step 4

Wait for the temperature of your “must” to drop quietly to around 20-22°C.
The density is expected to be around 1,050.

Add the yeast of your choice and let it ferment at room temperature for about a month. The final density will depend on your yeast, it will be between 1,000 and 1,010.

Step 5

Add 7g/l of sugar for bottling. The process is exactly the same as with a beer bottling.

You will let the bottles referment for 4 to 5 weeks before tasting.

If the AC-4 yeast will bring a nice thirst-quenching dryness and the AS-2 complexity and sweetness, we have two other special cider strains in our catalog.
