K.14 Eitrheim Kveik Pro is a multi-strain yeast passed down from the Eitrheim farm in Tokheim, nestled in the heart of the Hardangerfjord. Used for generations, it embodies the legacy of traditional Norwegian farmhouse brewing. Unlike lab-isolated strains, it retains the richness of a living, complete, and ancestral culture.
Its aromatic profile? Ripe pear, plum, raisin, prune, and honey. This flavor palette brings a beautiful depth to strong or malty beers, true to the rustic and warm character of the Eitrheim terroir.
During its propagation, Kveik Yeastery carefully stabilized the strain. The natural synergy between the original yeasts was preserved, ensuring a reliable, active, and ready-to-use culture.
Eitrheim Kveik Pro offers a fast and aromatic solution. It’s perfectly suited for breweries without active temperature control, or those looking to speed up tank turnover without compromising quality. Even in summer, it ensures a clean, consistent fermentation with a remarkably smooth profile.
💡 Bonus? A 300 g sachet is enough to ferment 10 hL of beer.
Thermotolerance and fermentation efficiency of K.14 Eitrheim Kveik :
| Characteristic | Benefit for the brewery |
| Temperature range: 15–42 °C (optimum: 31–35 °C) | Consistent attenuation and sensory stability, even without glycol or refrigerated cellar. |
| Fast fermentation kinetics | Final gravity reached in 36 to 72 h, speeding up tank turnover. |
| Multi-strain aromatic synergy, bacteria-free | Rounded flavors of ripe pear, plum, and raisin, supported by notes of apricot, peach, pineapple, and citrus zest. |
| High ethanol and osmotic tolerance | Effectively ferments strong ales (Barley Wine or TIPA), where monocultures may fail. |
Temperature benchmarks & recommended beer styles :
| Target Temperature | Beer Style | Technical Justification |
| 15–18 °C | Light malty blonde Session IPA | At this lower temperature, ester production remains moderate, but the yeast’s round and fruity profile adds a nice texture to lighter beers. |
| 20–28 °C | Porter/Stout NEIPA | Moderate warmth enhances the fruity aromas from the yeast blend — ideal flavors for dark beers and perfect roundness for hoppy styles. |
| 29–34 °C | Double IPA Black IPA | The yeast’s roundness and alcohol tolerance make it a top choice for strong hoppy beers. |
| 35–42 °C | Imperial Stout/Barley Wine (Barrel Aged or not) | At this upper limit, the culture remains highly resilient and ferments in ≈ 48/36 h; the dried fruit aromas pair perfectly with very strong, malty and/or dark beers. |
Usage recommendations :
Pitching rate : 30 g/hL
Aeration : A single oxygen injection at 8–10 ppm is sufficient. The culture is robust, so no additional input is needed.
Temperature rise : Ambient temperature can rise naturally — no impact on aroma. The strain blend remains stable, even with rapid increases.
Conditioning : This yeast has low flocculation and a very smooth profile, ideal for hazy styles and heavily malted beers. For added stability, we still recommend a cold crash or centrifugation, depending on your usual practices.
Strategic advantages during summer :
Energy savings : The yeast places minimal demand on the cooling system, reducing operating costs, especially during heat waves.
Continuous production : Enables year-round brewing, even without a climate-controlled cellar or dedicated cooling system.
Faster time-to-market : Thanks to its rapid fermentation, seasonal beers are ready sooner. Ideal for festivals and peak tourist periods.
K.14 Eitrheim Kveik Pro in summary :
Like other Yeastery Kveik strains, Eitrheim thrives in high temperatures and turns ambient heat into a true technical advantage.
By adjusting fermentation temperature based on the beer style, brewers can maintain quality, speed up production, and reduce energy consumption—especially during summer.
We successfully tested it on a London Porter: fermentation at 32 °C was fast and clean, resulting in a beautiful malty roundness. On a NEIPA brewed with Spectrum hop extract, the fruity profile was intensified while keeping a soft, velvety mouthfeel.
