
K.22 Stalljen Kveik Pro is a multi-strain yeast directly from the Seljeset farm in Hornindal, north of the Jostedal glacier. Once self-sufficient and dairy, the farm raised its own animals and brewed its beers on site. The name “Stalljen” comes from the former family stable, now transformed into a craft brewery.
Unlike laboratory-isolated strains, this yeast retains a living culture, shaped by generations of farm brewing. It reflects an intact heritage, passed down in its natural diversity.
Stalljen’s aroma profile is highly versatile, depending on temperature. It combines notes of mango, pineapple, apple and ripe fruit, enhanced by a subtle touch of clove and anise. At higher temperatures, there’s a tiny, creamy, slightly caramelized nuance. This character may be linked to the farm’s dairy past.
During propagation, Kveik Yeastery stabilized the strain with precision. They have preserved the natural interaction between the original yeasts, guaranteeing a reliable, active and ready-to-use culture.

Recommendations for use :
Seeding rate : 30 g/HL
Ventilation : A single injection of oxygen at 8-10 ppm is sufficient. As the culture is robust, no additional input is required.
Temperature rise : Ambient temperature can rise naturally – no impact on aroma. The strain mix remains stable, even in the event of a rapid rise.
Packaging : For crystal-clear beer, we recommend cold crashing or centrifuging, depending on your habits.

Stalljen is clearly the most versatile yeast in Kveik Yeastery’s pro range. We were able to try it on a traditional Norwegian Kornøl and on a Steam beer (here in the brassam version). Two very different styles. The first, very round, fruity and spicy (fermented at 37°C) and the second, fermented at 15°C, very clean and thirst-quenching.
In short, Stalljen is a robust, well-balanced multi-strain yeast, perfectly adapted to high fermentation temperatures. It transforms ambient heat into a technical asset.
