During propagation, Kveik Yeastery carefully removed lactic acid bacteria and other unwanted microorganisms—while maintaining the natural balance and synergy of the original yeast strains.

Recommendations for use :

  • Seeding rate : 30 g/HL
  • Ventilation : A single dose of oxygen at 8-10 ppm is sufficient. The robustness of the crop means that no additional oxygen is needed.
  • Free temperature rise : No need to worry about letting the ambient temperature rise naturally. The yeast mixture remains aromatically stable, even in the event of a rapid rise.
  • Packaging : Cold crash or centrifugation as usual. The kveik flocculates efficiently once the final density has been reached.
