The English Brown Ale Recipe

  • Color: Brown
  • Alcohol: 4.2%
  • Quantity: 20L
  • Bitterness: Mild
  • Brewing Time: 5 hours

Ingredients :

  • 4kg of Maris Otter Malt
  • 250g of Pale Chocolate Malt
  • 200g of Caraamber Malt
  • 45g of Fuggles Hops
  • 2 packets of WHC Old English yeast
  • Total water volume: 32L (Preferably Sulfate = Chloride: 1:1)

Brew our brew english brown ale recipe step by step :

Step 1 :

Heat 15 liters of water to 72°C and pour in the crushed grains.

Stir well to soak all the malt and don’t hesitate to crush the lumps against the walls of the tank.

Mix until the temperature drops to 66°C. Maintain it for 1 hour.

Meanwhile, heat 17 liters of water to 75°C.

Step 2 :

Once the saccharification hour is complete, proceed to filtration and rinsing.

Step3 :

Once step 2 is complete, heat your wort to proceed with a 60-minute boil.

Add your 45g of hops at the start of the timer. For a milder bitterness, you can also add it during filtration, it’s up to you !

Step 4 :

Cool the wort to 21°C and transfer it to the fermenter, not forgetting the yeast.

Your initial gravity should be around 1.043.

Ferment at 21°C for 4 weeks.

To ensure fermentation is complete, raise the temperature to 23°C for the last 4 days.

For this Brown Ale recipe, the final gravity should be around 1.011.

Step 5 :

Add 4g/l of sugar at bottling. English beers should not be too carbonated.

Conclusion :

This Brown Ale showcases our superb English malts. The Maris Otter from Simpsons will bring a very distinct biscuity note. The Pale Chocolate will give us lovely hints of slightly roasted chocolate hazelnuts. Finally, the Caraamber will round it all off with its subtle caramelized smoothness.
